Job Description
Position Overview: We are seeking a skilled and experienced Garde Manger Cook to join our team at Mister A's, a prestigious fine dining establishment known for its exceptional culinary standards and impeccable service. The ideal candidate should have a minimum of 3 years of experience working in fine dining kitchens, demonstrating proficiency in executing various cooking techniques and contributing to the overall excellence of our culinary offerings. We are looking for someone who is available to work evenings. Responsibilities: Execute refined cold kitchen techniques including artisanal charcuterie, curing and smoking, pâté and terrine fabrication, precise salad composition, canapé and amuse-bouche preparation, and handcrafted cold sauces and emulsifications to consistently deliver beautifully plated, detail-driven dishes that uphold our commitment to culinary excellence. Coordinate cold station orders with the Sous Chef and kitchen team to ensure timely and efficient execution of garde manger preparations throughout service. Maintain a meticulously clean and organized cold station, adhering to food safety and sanitation standards at all times. Collaborate with the kitchen team to uphold the highest standards of quality, consistency, and artistry in cold food preparation and presentation. Adhere to proper food handling procedures, temperature protocols, and safety regulations to ensure the integrity of all cold kitchen products. Qualifications: Proven experience as a Garde Manger Cook or Cold Station Cook in a fine dining restaurant or comparable culinary environment, with a minimum of 3 years of hands-on kitchen experience. Proficiency in cold kitchen techniques including charcuterie, garde manger fundamentals, plating, and classical culinary principles. Ability to work effectively in a fast-paced environment, maintaining composure and precision during high-volume service. Strong communication skills and the ability to collaborate seamlessly with all kitchen staff to ensure smooth and efficient operations. Knowledge of food safety, temperature control, and sanitation regulations, with a commitment to maintaining an impeccably clean workspace. Culinary degree or certificate from an accredited culinary institute is preferred but not required — demonstrated skill and experience are paramount. Physical Requirements: Ability to stand for extended periods, lift heavy objects, and perform in a demanding, fast-paced kitchen environment.
