HEAD SUSHI CHEF — OSAKA MIAMI Location: Miami, FL. Position Type: Full-Time About the Role We are seeking an experienced Head Itamae to strategically manage the comprehensive operation of the sushi bar, optimizing production processes and cost control, in accordance with the brand's standards of excellence and the Restaurant Manager's guidelines, to ensure maximum profitability and consistency of the Nikkei offering. Key Responsibilities Lead and evaluate the performance of the Senior Itamae Chef and Junior Itamae Chef, in accordance with the company's leadership guidelines, to ensure skills development and role fulfillment. Audit cost control and inventory systems, following the company's financial procedures, to ensure the area's profitability and optimize raw material use. Define quality standards for fish handling (receiving and maturation), in accordance with food safety regulations, to guarantee maximum safety and flavor in every product. Design advanced training programs for the team, based on the brand's cutting and preparation techniques, to raise the team's technical level. Manage staff schedules and rotations, according to Miami's operational needs, to ensure efficient coverage and a balanced workload. Qualifications Technical studies in: Gastronomy. Specialized training in sushi and Japanese cuisine (traditional or fusion). Experience 1 year of experience as Head Itamae in Nikkei fusion restaurants. 5 years as Itamae. Experience leading teams. Knowledge & Skills Knowledge of fish and seafood (types, characteristics, and seasonality). Knowledge of Japanese and Nikkei cuisine. Knowledge of food contamination risk control and Good Food Handling Practices (GFP). In-depth knowledge of fusion and Nikkei cuisine, including sauces, marinades, and techniques. Expert mastery of comprehensive fish handling: knowledge of varieties, seasonality, butchering techniques, aging, preservation, and cutting.
