This role combines hands-on baking with leadership responsibilities, requiring strong organization, attention to detail, and the ability to manage production in a fast-paced environment. The Lead Baker is expected to lead by example, maintain exceptional product standards, and contribute to the continued evolution of the pastry and bakery program. Working closely with culinary leadership, this position helps drive both daily execution and long-term development while maintaining a clean, efficient, and disciplined workspace. Key Responsibilities Production & Execution Prepare and execute all baked goods, breads, pastries, desserts, and related products according to established recipes and standards Ensure consistency in flavor, texture, appearance, and overall quality across all items Manage daily production schedules and prep lists to support operational needs and service demands Monitor product freshness and maintain proper rotation and storage procedures Leadership & Team Development Lead and support bakery and pastry team members through training, guidance, and accountability Maintain a strong sense of organization and urgency while setting the standard for execution and professionalism Assist in delegating tasks and ensuring production goals are completed efficiently and accurately Foster a positive and team-oriented kitchen environment Menu Development & Creativity Collaborate with culinary leadership on seasonal features, menu development, and new product ideas Contribute creative input while maintaining alignment with the overall concept and standards Stay informed on current baking and pastry trends, techniques, and industry developments Operational Oversight Maintain inventory awareness, assist with ordering, and monitor product levels to minimize waste and shortages Ensure all baking equipment, tools, and workspaces are clean, organized, and properly maintained Assist with receiving and properly storing deliveries and ingredients Quality, Cleanliness & Compliance Uphold all food safety, sanitation, and health department standards at all times Maintain proper labeling, dating, and storage procedures for all products Ensure cleanliness and organization throughout all bakery and prep areas
