Job Description
Job Summary We at Accordia Natural Wine Bar and Sama Sama, both located-on Beverley Street in Staunton, are looking for line cooks at both restaurants. Both are small team oriented and focused on international cuisine. Both Sama Sama and Accordia are internationally focused; Sama is dedicated to world cuisine while Accordia skews more to Europe and the Western Hemisphere. We are looking for someone who has a sense and desire to learn about international flavors and willing to jump in and be active and creative. We value highly candidates who understand real hospitality, enjoy teamwork, can provide leadership in a small kitchen environment, and can communicate well with the head chef, owners and between front and back of house to provide beyond ordinary service. Help us on our mission to serve creative, unique cuisine in Staunton. *We would like to see a minimum of 1-2 years of solid kitchen work as a requirement. Duties Weekly prep and pre-service prep; ensuring pars are hit and line is ready Run smooth and efficient service with quality control and good speed and turnaround times on orders Clean as you go, keeping workspace uncluttered and clean while adhering to food safety standards We all take turns in dish and delivering food when necessary Assist in menu planning and development, incorporating seasonal ingredients and customer preferences. Address customer inquiries and complaints promptly to maintain high satisfaction levels - taking cues from chef and management / owners Collaborate with other management team members to enhance overall restaurant performance Maintain standards with regards to opening, during shift, and closing procedures Work together as a team to continually improve and help us achieve our goals and beyond Learn menu quickly: items, ingredients, allergy concerns, what is vegan-vegetarian-gluten free. Bring your creativity to it, once comfortable, if you have insights. Work special events. We create many events that involve unique cuisines from around the globe. Active Skills & Skills to Develop Takes responsibility and ownership of issues, self-starter who finds work to do Ability to follow procedure lists and maintain pars Communicate well with your head chef, FOH, and managers and owners; ask questions when necessary; elevate important issues and concerns Understanding of efficiency through creating systems and making things simple by reducing steps and redundancies Strong knowledge of hospitality management principles Proven experience in kitchen management or as an assistant manager with a focus on operational excellence, ordering routine and cost calculations or a skilled cook with a willingness to lead and learn Excellent customer service skills with the ability to foster positive relationships with guests and staff alike. Solid understanding of food safety regulations and best practices for maintaining hygiene standards. Ability to have an overview of kitchen and to problem solve on the fly - willingness to help when you see another team member struggling or falling behind Culinary skills with experience as a cook is advantageous for hands-on leadership. Both kitchens are dynamic and creative. Both restaurants are driven by cuisine, hospitality, atmosphere, and events. Both spaces have creative head chefs / kitchen managers with good experience. Accordia is expanding its space and menu. You can be a part of creating new and exciting dishes from around the world and helping to pair them with our food and beverages. Menu will change seasonally and we will work together to create interesting specials drawing inspiration from global flavors. Sama Sama has a full international menu with a focus on elevated street food and global comfort food. The menu changes seasonally and uses locally sourced ingredients; testing out new menu items and working on specials is also a focus. The ideal cook at both restaurants requires drive, curiosity, and love of the culinary world. Our aim is to present modern, interesting, and culturally diverse cuisines and beverages with the atmosphere to match. This is a fun, creative environment with the opportunity to help us expand our current footprint.
