Led by Executive Chef Robbie Felice, our kitchen blends traditional technique with modern execution in a fast-paced, chef-driven environment. Position Overview We are seeking an experienced Pasta Maker (Pastaio) to join our team. This role is responsible for the daily production of fresh, handmade pasta and supporting prep for pasta dishes served during service. The ideal candidate has a strong foundation in pasta production, understands dough development, and takes pride in consistency, texture, and execution. Key Responsibilities Prepare and produce fresh pasta daily (extruded and/or hand-rolled) Execute dough mixing, resting, sheeting, cutting, and shaping techniques Maintain consistency in texture, thickness, and portioning Manage daily par levels and production planning Ensure proper storage, labeling, and rotation of all products Maintain a clean, organized, and efficient workstation Support the kitchen team with prep and pasta station execution as needed Qualifications 2+ years of experience in pasta production or Italian kitchens Strong understanding of dough hydration, flour types, and technique Experience with pasta sheeters, extruders, and hand-formed shapes Attention to detail and consistency Ability to work early shifts for production if needed Strong work ethic, reliability, and team mindset Pay: $19.00 - $23.00 per hour Work Location: In person
