Pastry Sous Chef — Suraya Suraya is seeking a passionate and highly skilled Pastry Sous Chef to join our team. Led by a James Beard–recognized pastry chef at a Michelin-recommended restaurant, our pastry program produces everything in-house from scratch — including breads, viennoiserie, ice cream, composed plated desserts, and entremets. We are committed to cultivating a positive, respectful, and growth-driven kitchen environment. Our team is challenged to continuously refine both foundational and advanced techniques while maintaining a healthy, sustainable work/life balance. Our menu celebrates traditional Lebanese cuisine refined through modern technique and exceptional ingredients. The kitchen features a custom coal-fired grill and a wood-burning bread oven. We execute high-volume service with the finesse, discipline, and consistency of fine dining. Responsibilities Lead daily pastry production and service with precision and consistency Manage and mentor a team of 8+ pastry cooks Ensure adherence to recipes, standards, and plating expectations Support menu development, seasonal items, and R&D projects Maintain organization, sanitation, and food safety standards Assist with ordering, inventory, and cost awareness Foster a collaborative, respectful, and growth-focused kitchen culture Maintain high standards under high-volume service Ideal Candidate A strong pastry professional who thrives in high-volume environments Minimum 2 years leadership experience Deep respect for technique-driven cooking and attention to detail Strong organizational and communication skills Passion for mentoring and developing others Calm, solutions-oriented mindset during service Career-driven and seeking a long-term home for growth and development Experience with breads, laminated doughs, plated desserts, and ice cream production is highly valued.
