Job Description
As Sous Chef at Yards Brewing Company, you and the exeuctive chef will take complete responsibility of our Full-Service Kitchen and executing in our Event spaces as well. You will lead a team of line cooks, prep cooks, and dishwashing staff. You will be responsible for hiring, training and supervision of the kitchen staff while maintaining grace under fire and constant coaching and developing a strong TEAM. You will be accountable for food production, food quality, labor and food costs, cleanliness, safety, and sanitation. Duties and Responsibilities · Collaborate with Management creating seasonal menus. · Scheduling Team as required by anticipating business activity, while maintaining labor cost objectives. · Direct the food prep process. · Ordering, receiving and organization of all kitchen products. · Weekly labor and food cost reports. · Preventative maintenance of kitchen equipment through our Maintenance Department. · Hire, manage & train kitchen staff. · Create a positive work environment. · Weekly meeting with Events team to review and process all BEOs. · Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the Taproom, employees and guests. · Partner with other KM in making employment and termination decisions. · Provide timely and constructive feedback and coaching to team regarding their performance, both positive and negative. · Maintain ServSafe Certification If this sounds like you, we'd love to talk further!
